About the Recipe
An appetizer or main course
1 lb Lion’s Mane mushroom
1 egg beaten
½ cup breadcrumbs
¼ cup mayonnaise
2 Tbs Dijon mustard
2 Tbs finely chopped red bell pepper
2 Tbs finely chopped green onions
1 Tbs fresh lemon juice
1 Tbs Old Bay seasoning
1 tsp Worcester sauce
¼ tsp salt
¼ tsp black pepper
2 Tbs olive oil
Shred the Lion’s Mane mushroom into small, crab-like pieces.
Roast the shreds at 225° for 15-20 minutes on a baking sheet: let cool.
In a bowl mix mushroom with all ingredients except for olive oil.
Shape mixture into small patties.
Heat olive oil in skillet on medium: cook 3-4 minutes per side until golden brown.
Remove and place on serving dish lined with paper towels.
Sever patties warm.
Options: garnish with additional green onion and a squeeze of lemon juice.
Serve with tartar sauce or aioli for dipping.
