Lion's Mane "Crab" Cakes

Ingredients

  • 1 lb Lion’s Mane mushroom

  • 1 egg beaten

  • ½ cup breadcrumbs

  • ¼ cup mayonnaise

  • 2 Tbs Dijon mustard

  • 2 Tbs finely chopped red bell pepper

  • 2 Tbs finely chopped green onions

  • 1 Tbs fresh lemon juice

  • 1 Tbs Old Bay seasoning

  • 1 tsp Worcester sauce

  • ¼ tsp salt

  • ¼ tsp black pepper

  • 2 Tbs olive oil

Preparation

  1. Shred the Lion’s Mane mushroom into small, crab-like pieces.

  2. Roast the shreds at 225° for 15-20 minutes on a baking sheet: let cool.

  3. In a bowl mix mushroom with all ingredients except for olive oil.

  4. Shape mixture into small patties.

  5. Heat olive oil in skillet on medium: cook 3-4 minutes per side until golden brown.

  6. Remove and place on serving dish lined with paper towels.

  7. Sever patties warm.

  8. Options: garnish with additional green onion and a squeeze of lemon juice.

  9. Serve with tartar sauce or aioli for dipping.
